He's a mate of Travis Tausend's - they actually share some winery space. Simon has been described to me as "the maddest chiller" lol. Skin contact Chardonnay here. 70% macerated, the rest direct pressed. Aged in tank, with no adds what so ever. Skinsy chard, but not as you know it.
