2021 Magical Animal

Notes from Yoko and Andries AKA Brave New Wine!
We really tried to push this wine to a more Jura-esque style this year by giving it extra time in barrel, some of which were not topped up, and extra time in tank. Gingin clone Chardonnay across three blocks with quite varying soil types and aspect. Hand picked, whole bunch pressed and 100% naturally fermented on full solids in French Oak Puncheons 40% new. Raised in the same barrels for 11 months with no additives, probably went through natural malolactic fermentation, then racked to tank to rest (on lees) for a further 6 months before being bottled with no fining, filtration or additives except a small amount of SO2. The wine shows notes of grilled nuts, sea spray, green apple and preserved lemon. The palate is slippery with a concentrated fresh fruit character, spice, a touch of flint and that mineral/saline oyster shell character, finishing long and moreish.
