2021 Defialy Wild & Free Petillant Naturel

The Wild & Free wines from Defialy are a collection of experimental wines, some more so than others.
Partly inspired by the Nestarec Youngsters wines but mostly inspired by the summer just passed and wanting to capture some of that raw Australian summer essence. Alive wines to be enjoyed now. This is Echuca Chardonnay wild fermented on skins for 7 days, pressed and bottled before fermentation finished, hand discorged a la method ancestral. No adds. Textural, dry as a bone, chard not as you know it.
