The Wild & Free wines from Defialy are a collection of experimental wines, some more so than others.
Partly inspired by the Nestarec Youngsters wines but mostly inspired by the summer just passed and wanting to capture some of that raw Australian summer essence. Alive wines to be enjoyed now. This is Humis Vineyard Shiraz direct pressed & wild fermented in stainless. No adds. Strawberries and cream but definitely not in a rosé kinda way. A Heathcote Shiraz minus the testosterone.
