2021 Defialy Wild & Free Chardonnay

This is a still version of popular recently released Pet Nat that didn't quite make it into bottle, so while it shares many of the same characteristics, without the bubbles it's interesting to see it in a different light and to see how it evolves under cork.
7 day skin contact Chardonnay from Echuca, VIC, pressed to tank. Unfined, unfiltered, no additives and no sulphur added. Super textural and complex yet fresh fruit shining through with notes of apple & citrus.
