The Wild & Free wines from Defialy are a collection of experimental wines, some more so than others.
Partly inspired by the Nestarec Youngsters wines but mostly inspired by the summer just passed and wanting to capture some of that raw Australian summer essence. Alive wines to be enjoyed now. This is Chalmers Heathcote Fiano and Pecorino skins wild fermented until dry then re-fermented in Humis Vineyard Shiraz and Carménère skins. Pressed on top of skin contact Vermentino skins. No adds. Light fizz, layered, fun & delicious.
