2021 Little Red Lights (Magnum - 1.5L)

Same vibes as the 2020 release but different vineyards and slightly different making methods.
All the Defialy wines are unfiltered, unfined, wild ferment and have no additions of any kind - just grapes. Faraday (VIC) fruit this year, Pinot Gris the side kick to the Cabernet Sauvignon instead of Chardonnay. Also this year the fruit was picked on the same day, same vineyard and co-fermented for 10 days on skins. Pressed to tank then moved to old oak on fine lees. Less of the redskin lolly notes than last year but still there, partly due to the granite soils but also the cold year and cool climate of Faraday. More darker fruits this year than last, very fine tannins and acidity, grip from the Gris. Likes just a little bit of a chill.
