Same vibes as the 2020 release but different vineyards and slightly different making methods.
All the Defialy wines are unfiltered, unfined, wild ferment and have no additions of any kind - just grapes. Mornington Peninsula (VIC) fruit this year - 14 day skin contact Sauvignon Blanc fermented in amphora, with elevage in old oak. Made pretty much the same way as last year but surprised at the difference of the finished wine. Really speaks of the cooler, wetter growing season - more savoury and vegetal than tropical. Aromatic, fine line of acid. Green notes. Mezcal. Some grapefruit and unripe stonefruit. Intriguing.
