2021 Chardonnay

Made in the same way as the last few years, direct press to tank and then racked to 3 old barriques for 9 months, 1 being left un-topped. As usual there's an oxidative element, salty olive brine and nutty, oily goodness, but this year the freshness is dialled way up, acid on par with the front label. No additions, no stirring, racking and bottling done by gravity.
