This year the Icebergs crew have worked with one of the few producers of native ingredients who have a genuine focus on supporting First Nations communities. They've used ingredients like sandalwood, lemon myrtle, Davidson plum and green ants. As with all traditional panettone, they are hung upside down after coming out of the oven to preserve the unique dome shape and internal crumb structure. They take 36 hours to make! Wild.
