2020 Sonnen Shed (Red)
Notes from Luke - he makes the wine...
The Rosato is made from old sparkling clones of Pinot Noir and was a ferment of a bit of whole bunch and mainly destemmed fruit hand plunged for 10 days before pressing and fermenting the rest of the way in barrel. About 180L of the blend was a barrel of rosé I pressed over Chardonnay skins when the fruit came in to give myself something to play with blending wise. I ended up using it to top the rest of the red barrels and managed to drink a fair bit of it in the process. It was pretty delicious. Hence the name “shed”. I bottled it in early spring. It’s got that Pinot sous bois thing and the reduction but also some weight and texture from the malo and high acid. Pretty light in colour; dark orange/pink. Almost like a real dark looking Pinot Gris.
