Lower Yarra Valley Pinot Gris from the grey ironstone rich soils of the Yarra Station Vineyard near Yarra Glen.
100% whole bunch wild ferment that extracts colour / flavour / aroma and tannin in a carbonic way. 11 days on skins then pressed to old puncheons where it goes through full malolactic fermentation prior to 8 months ageing at cool temps. No adds apart from a bit of sulphur at bottling. No fining or filtration. Amaro, toffee apple, figs and red berry flavours. Juicy and bright with a tight savoury tannin and a slight orange peel finish.
