2020 Persephone Sangiovese

Fruit from Hahndorf. Fermented for four days on skins, with foot stomping in open-top puncheon, basket pressed. This year it’s lighter than in previous years, with a translucent ruby hue. Tart strawberries, herbal tones, soft tannins. Aging recommended. Bottled under cork. 345 bottles produced.
