Robert Surmann’s farm is located in Totness with 25 year old vines grown on Black Sandy soil overlying petrified schist, it is V.S.P. Trained and spur pruned. Carbonically fermented for 5 days in a 2400L wooden barrel. Then aged in a combination of ceramic eggs, Terre cotta amphora and small barrels. Assembled at bottling.
