2020 Little Brunswick Wine Co. Wurundjeri Sunbury Pinot Noir

Sustainably managed by John Lakey at Lakey farms, originally this pinot noir was intended for sparkling wine.
However, the fruit comes out exceptionally concentrated and low yielding. To play on this we were very delicate with the fruit and put a portion of it through carbonic maceration. The finished ferments were then gently pressed in our hand-crank press which resulted in low juice yields. In bottle this wine has bright character of sour cherries, bramble, and cranberries with a gentle sweeping tanning structure that build throughout the glass. Unfiltered, unfined, vegan, sustainable practices.
