A few wines from long time Ganevat understudy, Nicolas Jacob who has been making wine on his own since 2016 to great acclaim though like all the very top producers in the Jura, in miniscule quantities. These wines have gone from cult to cultest. The reds are hand harvested and 100% de-stemmed. Spontaneous fermentation in a fiberglass tank and aged for 9 months in used barrels. No additions of any kind including SO2. 100% Poulsard.
