A blend of Chardonnay, Delaware, Red Millennium and Shine Muscat.
Red Millenium and Shine Muscat are simultaneously pressed after 12 days of skin ferment and then left for 1 month in amphora on lees. The chardonnay is pressed after 8 days of skin contact and then barrel ferment for 1 month. After all fermentation, assemblage and aged in stainless steel tank for 3 months. Delicate bubbles upon opening, blooming with notes of mandarin, and stone fruits. Unique on many levels.
