A blend of Steuben 43%, Delaware 41％ and Chardonnay 16%.
Steuben (straight press) is fermented and left sur lie in amphora for 3 months. Delaware is barrel fermented then directly pressed with whole bunch and aged in barrel. Chardonnay was barrel fermented and aged in barrel for 3 months. After all fermentation, assemblage and aged in stainless steel tank for 5 months. A wealth of flavour, nashi pear and apricot followed by a long finish - easily one of our favourite Bianco vintages yet.
