2020 Entropy Wines Gippsland Red
This red is mostly Merlot from South Gippsland with a little whole bunch Syrah from Baw Baw shire.
The merlot was de-stemmed into tank for a month on skins, Syrah was whole bunch for two weeks. Both were wild fermented then pressed into a single puncheon for ageing. The wine is light and bright with some nice crunchy tannin. The cold year lead to a long growing season and resulted in elegant wines with great natural acidity.
