2020 Cotillon Des Dames
Born and raised in the Savoie, Jean-Yves Péron studied winemaking in Bordeaux in the late 90’s.
After school he spent some time working for Thiery Allemand in Cornas and later with Bruno Schueller in Alsace, both of whom he considers his mentors. All fruit is organic and biodynamic. A blend of Jacquère and Altesse that spends three weeks on skins, and spontaneous fermentation in neutral oak with indigenous yeasts. Mineral, citrusy with bursts of flowers and honey. Unicorn alert!
