2020 Carto Rosé (ish)



Notes from Brendan - the winemaker...
All grapes were hand harvested from Vinifera Organic Vineyard in Mudgee, NSW. Only wild yeasts were used for fermentation and no additions apart from minimal So2. Grapes were chilled down overnight before processing. Then whole bunch pressed quite quickly without maceration, picking up very little colour. Racked to old oak barrel, topped with red wine.
