2020 Bink Little Red
Notes from big Koen - he makes the wines:
A blend of 80% Cabernet Franc and 20% Chenin Blanc. Cabernet Franc was picked end of February. 80% de-stemmend, 20% whole bunch underfeed. Left to ferment for about 5 days and then pressed to seasoned puncheons. Chenin Blanc is 100% de-stemmend, 3 day skin contact and the pressed to ceramic egg. Left to ferment to dry and the transferred to barrel. Blended about a month before bottling. Super bright nose, hits of blueberry with touches of pear and granny smith apple. Fresh start on the palate with Cab Franc taking the lead and Chenin Blanc giving the support and freshness. Very easy going style of light red. Can be served chilled or room temp...
