2019 Yume Sauvignon Blanc
This vineyard is leased and farmed by Ryan O’Meara of Express Winemakers.
It’s farmed ecologically. This means no synthetic additions and work is done to improve soil and vineyard health, without irrigation. Hand-picked in early March to 200L drums for two and a half weeks carbonic maceration, then basket pressed to old French oak for nine months. Hand bottled. Plenty of fruit here - slightly on the riper spectrum. Drink it with some cheese.
