2019 Yume Merrit Ambrosia
Before there was wine, there was Ambrosia.
Ambrosia is distinguished from mead as mead is traditionally made with the addition of beer yeast, whereas Yume Ambrosia is made with naturally occurring yeast in the honey or botanical additions. Merrit is an endemic eucalyptus species that produces an intensely flavourful honey with a nice acid line. Richly flavoured – though not dark or heavy – the honey itself has a piercing sweetness, luscious texture and bursting aromatics. Diluted with water, fermented until almost dry then bottled with a touch (10g/L) of residual sugar for spritz. What an incredible fizzy drink.
