2019 Yume Desert Mix Ambrosia
Before there was wine, there was Ambrosia.
Ambrosia is distinguished from mead as mead is traditionally made with the addition of beer yeast, whereas Yume Ambrosia is made with naturally occurring yeast in the honey or botanical additions. This comes from a site near Kalgoorlie, right on the edge of the Great Victoria Desert. Though not a monovarietal honey, it’s incredibly distinctive in its own right. The honey itself is a rich, amber-red colour and has a malty front palate backed with a lovely acidity and bright phenolics. Bottled with 10g residual sugar for spritz. A very fun fizzy drink.
