2019 Valentina Passalacqua Lux



Valentina Passalacqua's farm is located inside Gargano National Park in Apricena, Puglia, and has been in the family since beginning of the 1900's.
Farming her hectares biodynamically, Valentina works to show the true expression of this land that was once considered only suitable for cattle farming. The soil is rocky limestone that is rich in minerals at about 200 meters of altitude. The farm obtained organic certification in 1999, and has been worked biodynamically since the early 2000's. All the wines are spontaneously fermented, are never fined or filtered, and are without sulfur addition. 4 day maceration on this 100% Bombino. Spontaneous fermentation in stainless steel with indigenous yeasts... This softens the the acidity amplifying the citrus note and the fruit flavours of the wine.
