2019 Tampopo Chardonnay

Made as a side project in the inner west. Notes from the maker...
Subtropical situation. Chardonnay from Murrumbateman. Juice gets two hours of skin contact then slips into old oak, where it does its thing and then sits on its lees through winter. One barrel made. Monsoon muesli. Custard-apple-toffee-apple. Two parts cold bath, 90% humidity.
