The 2019 Nero d’Avola was fermented 50% whole bunch and 50% destemmed in an open-top vat for seven days, receiving twice daily punchdowns. After seven days it was basket pressed down to a single puncheon, where it finished fermentation and rested for 10 months. Fermentation was achieved with native yeast, and no additions save minimal effective SO2 were added. Bottled unfined and unfiltered.
