2019 Songs from Mars Ramato

The 2019 Ramato was hand picked, destemmed, and fermented on its skins in an open-top vat for eight days, receiving twice daily punchdowns. It was pressed in a basket down to two 227L barrique, where it finished fermentation and rested for 10 months. Fermentation was achieved with native yeast, and no additions save minimal effective SO2 were added. Bottled unfined and unfiltered.
