2019 Songs from Mars Black Sallad

The 2019 Black Sallad was hand picked, destemmed, and fermented on its skins in an open-top vat for five days, receiving twice daily punchdowns. After five days of skin contact it was basket pressed down to 300L barrique, where it finished fermentation and rested for 10 months. Fermentation was achieved with native yeast, and no additions save minimal effective SO2 were added. Bottled unfined and unfiltered.
