2019 Poppelvej Panagea
85% Cabernet Sauvignon and 15% Cabernet Franc from McLaren Vale.
Handpicked and destemmed, and fermented separately. Macerated on skins for 2 weeks & foot stomped twice daily. Pressed to oak (15% new for the cab sauv component) and remained on full solids for 10 months. Racked to stainless to settle for 2 weeks. Bottled unfined and unfiltered.
