The name derives from a sub-area where the Passerina vineyards are.
Years ago the area was famous for a source of fresh water, named Sgarzella, where people stopped to water the animals. Passerina re-fermented in bottle. Before the fermentation, the grapes spend 2-3 days on the skin. The juice rests in stainless steel until winter, with the least amount of racking possible, then bottled with the must of the previous vintage. After the second fermentation is complete the wine is released. Pineapple, pear, spices and flowers. Aromatic and super easy to drink.
