Pecorino (from pecora, meaning ‘sheep’) is not a grape native to the area, but rather it is a grape native to Arquata del Tronto, located on the Sibillini mountains on the border between Marche and Abruzzo.
The grapes are de-stemmed and spend 5-6 days on skins before being basket pressed into stainless steel vats. The wines remain in the same containers until spring. Soon after they are bottled without the use of fining or filtration and no addition of SO2. Pecorino is an early ripening grape, giving fresh, herbal, mineral wines. This wine is simple and direct, with great acidity and is super easy to drink.
