2019 Paysan Fleur Sauvage



Some new wines from Domaine Simha.
Originally the Paysan range was 500ml bottles of fizz. Now they're 750ml "farm wines". An every day drinking vibe... Handmade in small terracotta amphora. Wild fermented on skins for 30+ days, whole bunch pressed and rested in amphorae for one year. Bottled unfined and unfiltered with natural balance (lightly cloudy) and minimal sulphites. This cool, amber white wine is made using red wine methods. It's all fresh florals and waxy yuzu notes with savoury, food worthy texture. Chardonnay with a little Riesling thrown in for good measure.
