2019 Paysan Eh Bien!
Some new wines from Domaine Simha.
Originally the Paysan range was 500ml bottles of fizz. Now they're 750ml "farm wines". An every day drinking vibe... Handmade in small terracotta amphora. Wild fermented on skins for 30+ days, whole bunch pressed and rested in amphorae for one year. Bottled unfined and unfiltered with natural balance (lightly cloudy) and minimal sulphites. A floral, textural, medium bodied red banger. Spicy blueberry, charcuterie and smoky liquorice all-sorts. Pinot Noir dreams.
