2019 Paysan Coup de Coeur
Some new wines from Domaine Simha.
Originally the Paysan range was 500ml bottles of fizz. Now they're 750ml "farm wines". An every day drinking vibe... Handmade in small terracotta amphora. Wild fermented on skins for 30+ days, whole bunch pressed and rested in amphorae for one year. Bottled unfined and unfiltered with natural balance (lightly cloudy) and minimal sulphites. This is a blend of Pinot Noir and Pinot Gris. We like to call this a light, savoury red. Supple and perfumed with peach, orange rind and rose-hip all cradled in tannin and spice. Mouthwatering and delicious, drinkable as hell.
