2019 Made By Monks Semillon
One set of notes, for two wines...
Don't worry, it makes sense... Fruit sourced from the Tamar valley in northern Tasmania. Hand picked and cold settled over two nights, whole bunch pressed to various fermentation vessels, all stainless save for one old French oak puncheon - this became the fume release - wild ferments and no additions. Only 1200L of Semillon proper and 500L of the Fume version made. Bottled with crown seal and minimal S02, 100 Magnums bottled from the fume puncheon under cork with zero sulphur. Fresh and zesty with fruitiness and bite for the Semillon proper, natural sulphide and old oak characters, some nuttiness with clean fruit and sharp acidity with the Fume.
