2019 Konpira Maru Admiral Adama



100% Semillon.
Fruit left to ferment on skins ensuring whole berries remained. Macerating on skins for three weeks with high-ferment temperatures, oxidatively handled with plenty of hand plunging throughout. Basket-pressed in tank and left to mellow for seven months. Two rackings during this time and then hand bottled. Unfined and unfiltered with no additions. Not your average Semillon. Savoury nutty oxidative notes combine with citrus fruits and pith. The palate is creamy and textural from extended lees contact with integrated tannins that add another layer of complexity.
