2019 Fallow Sangio!

Fallow are in new digs in Healesville, and they've upped production.
They've also upped focus and refine. A great new release from them. This is 70% sips/30% cheeky. Blended in the Winter, bottled in October. Great balance with the lightness of Sips and the body of Cheeky. Spice on nose, mountain pepper/lemon myrtle, Kakadu plum and dill. Palette is all red liquorice, tang, young strawberry / raspberry, hay and ripe apricot. Minimal sulphur at bottling.
