2019 Ephemera Sauvignon Blanc



An experiment into oxidative winemaking.
The the fruit was destemmed and left on skins for 2 days before pressing to barrel. Post ferment the barrels were slightly topped then left for 18 months. The barrels developed a natural film. After 18 months the wine was racked with a small sulphur addition prior to bottling. The wine has rested in bottle for 7 months.
