2019 Entropy Wines Pinot Noir



Ryan Ponsford makes wine in the Gippsland.
Not all of his fruit comes from there though - some comes from the Mornington, like this one. Pinot Noir from Balnarring on the Mornington Peninsula. Destemmed as whole berries into tank, left alone for a month and then pressed. Fermentation was slow and the wine did not finish fermenting until August. the Wine was then racked to barrel for ageing. The wine is fresh and deep with that Mornington Peninsula brightness.
