From 5 different parcels from different exposures and altitudes.
Some direct press and some free-run juice. Grapes are spontaneous fermented with indigenous yeasts in stainless steel and aged for 10 months in the same containers. Only 10% Chardonnay, which comes from old vines ferments in 10hl old oak barrels and aged in the same containers. Blended before bottling and left to rest for about 8 months before release.
