2019 Continental Platter Pink Lightning
This is a lot of fun.
All the fruit is fermented separately, using indigenous yeasts, and all fermented and aged in stainless tanks. The Syrah Semillon and Sauvignon both get 7-10 days skin maceration (de-stemmed) before being pressed to tank. The Pinot Grigio is direct pressed to tank and left on lees for 4 months. The wine is blended before bottling with approximately 30ppm SO2 and bubbled using the Charmat method. Light and dry with persistent bubbles, this wine is red and green strawberry fruit giving some sweetness a light herbaceous finish.
