2019 Commune of Buttons ABC Chardonnay

The ABC parcel is the coolest site in the vineyard facing due east with a relatively gentle slope. It also has some of the thinnest soil of clay but with the sandstone shelf closest to the surface. The coolness and bareness of the soil always produces a leaner more structured wine. For this reason, we picked the ABC parcel either side of the clover parcel on the 3rd and the 4th of March. It was hand harvested and the bunches allowed to chill down overnight. In the morning we pressed to tank and the juice was allowed to settle again overnight. Fermentation initially took place in tank and finished in 600L and 500L barrels.
