2019 Comme Ci Comme Ça Semillon

Magpie Springs vineyard in the Hills has been farmed organically for the past 3 years. Half of this fruit was whole bunch and the other half destemmed. All the fruit was fermented together and gently plunged by hand twice a day for four weeks. The second part of the winer is Semillon Rouge, picked 2 weeks later when there is a bit of colour in the skins. All destemmed, foot stomped and left for 24 hours before pressed and fermented in a stainless steel tank. The 2 parcels were blended a week before bottling. A textural, slightly cloudy and electric skin contact wine.
