2019 Château Acid Bianco
100% biodynamic Vermentino from a sandy decomposed granite parcel in the remote central ranges of NSW.
2 weeks skin contact and 10 months untopped in terracotta, gravity only, zero adds. Some more detailed notes from the boys - 2019 was our third vintage with this 1ha parcel of Vermentino, and while 2018 was a hot vintage producing a more fruit forward wine, 2019 is somewhat of a return to the cooler, lighter and more savoury style of the 2017. There's still the intense apricot and floral perfume, but with structure and acidity that give it the dimension also found in 2017. This wine spends 10 months under a thick flor, just long enough to introduce tertiary notes but short enough to retain freshness, also gives some degree of oxygen immunity and volatility is low, so very stable.
