Notes from Brendan - the winemaker...
All grapes were hand harvested from Vinifera Organic Vineyard in Mudgee, NSW. Only wild yeasts were used for fermentation and no additions apart from minimal So2.
Grapes were chilled down overnight before processing. Then whole bunch pressed quite quickly without maceration. Juice settled then racked to 3- year-old French oak barrels. Some oxidative handling.
