2019 Brash Higgins Crystal



The 2019 is the second time Brash has made this, and it’s a wild.
He added 40 litres of frozen R/SM (riesling/semillon) juice back to the dry, chilled Crystal/Chenin wine in May 2019 to reawaken the yeast and help the wine reignite with carbonation in the bottle. The yeast eat the added sugar in the R/SM juice and naturally create carbon dioxide as a by product. The wine is juicy and gently sparkling. No SO2, so keep it cold, please. Unfiltered, a bit of sediment exists.
