An ode to the complex & nuanced wines of the Jura.
Ouillé wines (otherwise pronounced ‘Oo-yeh’) see their vessels kept full to retain freshness & vigour, while still exhibiting a faint fino-tang. Certified organic & handpicked Chardonnay from the Ablington Vineyard. Macerated on skins for 7 days before it was pressed & wild fermented in a Nomblot concrete egg. Bottled after 4 months on solids, unfiltered with zero additions.
