The 2018's from Xavier are in the shop! 100% whole bunch press. Fermented in a mixture of stainless and old 225L barriques. The wine is allowed to go through malolactic fermentation and sits on full lees. The barrels are left to naturally settle and cold stabilise over winter before gentle racking and blending with 25ppm SO2. This wine is not fined with egg, milk or animal proteins. This is a blend of Cabernet and Shiraz.
